Goodbye 2009!

Started my day off with a brisk walk to Torchy's Tacos. Had a migas taco with chorizo and picked up the baja shrimp and fried avocado for Chris.

I am in the search for a great tasting cinnamon roll. I wasn't too impressed with the one I got from Moonlight Bakery. Icing was ok, dough was ok, amount of cinnamon ok. In short, very average.

Veggie meatloaf


Rice, lentils, veggie broth, carrots, celery, onion, corn, peas, spinach, basil, mozzarella, parmigiano, eggs, bread crumbs, salt and pepper. Topped with tomato and parmigiano.

Maple cookies

I recently came across the blog Eat Make Read and instantly became a fan. Upon seeing the post on maple glazed cookies from Martha Stewart's Everyday Food (November 2009), I had to try it.

3 cups all purpose flour
1 teaspoon coarse salt + 2 Tablespoons for sprinkling on top
1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
1/2 cup and 1 cup pure maple syrup
2 large egg yolks

Preheat oven to 350 C. Sift flour and salt. In a separate bowl, beat butter and sugar until light and fluffy, then add 1/2 cup maple syrup and egg yolks. Beat in flour mixture. Drop batter 3-inches apart onto to baking sheets with parchment paper and flatten. Bake 12-15 minutes, rotating sheets halfway through. Reduce 1 cup maple syrup to 3/4 cup and spoon over cooled cookies. Sprinkle with salt.

Baked elbows with roasted veggies


Roast red peppers, zucchini, yellow squash, and onions with olive oil, salt, pepper, and Italian herbs at 450 C. Boil noodles and mix with veggies, fontina, mozzarella, parmigiana, peas, marinara sauce, and salt and pepper. Top with parmigiana and bake for 25 minutes.

Holy cow my kitchen smells amazing.

Fish in a potato flake crust with tomato basil oil and corn pancakes


Blended 3 beefsteak tomatoes and reduced to about 1 cup. Strained liquid into a clean saucepan and reduced half of the amount. Added 1/2 cup olive oil and chopped basil. Set aside.

Dipped red snapper in a beaten edd and coated with half package of instant potato mix. Cooked on both sides and seasoned with salt and pepper.



Mixed 2/3 cup corn meal, 1 cup flour, pinch sugar, 2 eggs, 1 1/2 tablespoon sweet butter, 1 cup milk, and 1 can of corn for pancakes. Cook on both sides for 30-60 seconds.

Nonya Sambal Pork

Blended chopped onions, garlic, ginger, and lemon grass to make a paste. Added chopped chilies, chili flakes, and shrimp paste. Stir fried for 10 minutes, added pre-cooked, sliced pork and cooked for 10 minutes. Add dark soy sauce, sugar, and salt and cooked for another 5 minutes.

Tofu, tomatoes, and potatoes


Potato fritters with tamari tofu and tomato ginger sauce.

Boiled and grated potatoes. After seasoning with salt and pepper, rolled them into balls, flattened them on the stove, and cooked for 6 minutes on both sides.

Marinated tofu in tamari, sesame oil, agave, ginger, and garlic. Baked at 400 C until crispy.

Heated excess marinade with olive oil, chopped tomatoes, and extra ginger for approximately 30 minutes.

Amore!

Lasagne Bolognese with Spinach. Halved the recipe, still plenty. First attempt at lasagne, noodles are a bit dry at various areas. I should be sleeping right now, but I've already had two mini-servings.

Gingered Vegetarian Fish


In a small dish: soy sauce, sesame oil, lime juice, agave, ginger, scallions, garlic, thai pepper mixture. Lined fillets in foil, topped with mixture, carrots, and additional ginger, scallions, and garlic. Baked at 425 in foil pocket for 20 minutes. Topped with cilantro and served with rice and steamed broccoli and carrots.

Vegan treats


Yam fries: Dipped yams in soy milk with vanilla extract and coated with panko bread crumbs in cinnamon and sugar. Drizzled with cinnamon and oil, baked at 425 for 30 minutes.


Oatmeal cookies: Modified recipe from a vegan recipe. Used half the amount of sugar and added dried cherries and chocolate chunks.

Enchiladas!


Modification to a Food Network recipe. Used tofu instead of chicken and added black beans. Substituted mole for enchilada sauce. No cheese, but still tasty. Used excess stuffing as a topping.

Pot roast


Seasoned beef with salt, pepper, Italian herbs, and Worcestershire. Placed on top of onions and carrots and filled pan with beef broth and a splash of OJ. Cooked at 325 for about 30 minutes or so, topped with tomatoes and cooked for an additional half hour.

Soyrizo


Dinner for me and Chris: soyrizo and potato tacos. Cooked soyrizo until crispy, then stir-fried garlic, onions, green peppers, and potatoes. Seasoned with pepper, salt, paprika, and cumin. Served with corn tortillas and salsa.

Can't take the credit for this one.
